As a sequence to my last post about private tasting with rishi tea, I paired simple fig and brie toasts with white peony tea from rishi tea company. If you haven’t read my previous post about private tasting with rishi tea, please read it here
Now, let’s check it out how to make simple fig and brie toasts on my youtube video
All you need is well ripe figs, french baguette and nice creamy brie from local market
When summer is here, I always make sure I feed myself with lots of figs and peaches. This simple way of eating figs on top of creamy brie cheese and toasty french baguette is always a classic
These green and red colors reminds me of Christmas!
White Peony King, Rishi Tea Company
Do you spot silver needles and also green leaves? As you can tell with bright green leaves, they are very young and thus taste really grassy and fresh
White teas also have a potential to be aged just like puer tea. It means that if you drink white tea today and a year later, the flavor and color of tea will be totally different. The older the tea leaves, the nuttier and deeper the flavor will be. That is why, there is a saying ““1 year tea, 3 years medicine, 7 years treasure.” Because this white peony was pretty young, it was rich in green oil and tastes still very grassy green. I prefer an older white tea for drinking by itself because it is smoother. However, this young Bai Mu Dan actually was a good pair with fig and brie toasts since they were creamy and sweet. I like pairing greener tea with sweeter food, since teas rich in green oil offset the sweetness. That is why green matcha is a perfect combo for small treats.
Hope you enjoyed my first food and tea pairing post! Enjoy lots of figs before summer is gone!
