[recipe] YUBU CHOBAB │ soybean curd with fried rice

YUBU CHOBAB, soybean curd with rice, is a typical picnic Korean food along with Kimbob, Korean seaweed roll. It is easy and you don’t need a lot of ingredients : soybean curd, rice and whatever you have in the fridge!

Take out whatever you have in the fridge!

Finely chop every vegetable into small pieces

First, saute onion in a medium-low fire until it gets nice brown

Add all the vegetables in the order of the most hardest texture to the least (in my case, carrot → yellow bell pepper → zucchini)

Add finely chopped jalapeno depending on how spicy you want (I used a whole jalapeno because I love spicy food)

Add finely chopped ham and Sprinkle a pinch of black pepper (and salt if necessary, but since ham is usually salty i skipped it) for taste

Add one bowl of cooked rice and stir well until they are even mixed together

Fried soybean curd in package can be found easily in the refrigerator section of any Asian market. I used Korean brand but the brand does not really matter since we are just going to use the soybean curd, not the sauce or seasoning that is often included in the package

Take out fried soybean curd from the package and drain all the juice out

Fill fried rice into the pocket of he soybean curd gently

To make it healthy, I’ve used brown rice with farro and quinoa. You can substitute any of those listed ingredients to whatever you have in your fridge. To make it even healthier, you substitute ham to shrimp or tuna.

Ingredients
  • Fried soybean curd in package
  • Cooked rice
  • ½ red onion
  • ½ yellow bell pepper
  • 1 green jalapeno,
  • ½ zucchini
  • ½ carrot
  • 30g ham
  • little bit of salt and pepper for seasoning
Instructions
  1. Prepare cooked rice
  2. Finely chop all the vegetables and ham
  3. Satue finely chopped onions with 1t spoon of canola oil at medium low temperature
  4. Add all the vegetables in the order of the most hardest texture to the least (in my case, carrot → yellow bell pepper → zucchini)
  5. Saute all the chopped vegetables until they get brown and start to smell amazing!
  6. Add finely chopped jalapeno depending on how spicy you want (I used a whole jalapeno because I love spicy food)
  7. Add finely chopped ham and sprinkle salt and pepper (1t spoon each) to taste
  8. Add cooked rice and stir well until they are even mixed together
  9. Take out fried soybean curd from the package and drain all the juice out, Fill fried rice into the pocket
Notes
This is a great recipe to help you get rid of whatever you have in the fridge. Take out all the veggies and ham that you have and stir fry with rice! fill them in the fried soybean curd. Be creative and be bold! quick and easy lunch box.
